Abstract
Indonesia merupakan negara yang memiliki banyak keberagaman, salah satunya pada bidang kuliner. Eksistensi makanan Indonesia tidak perlu dipertanyakan lagi, bahkan beberapa di antaranya termasuk dalam daftar teratas makanan terenak di dunia. Surabaya merupakan salah satu kota di Indonesia yang memiliki banyak keberagaman kuliner. Hal tersebut disebabkan karena Kuliner merupakan kebutuhan yang bersifat konsumsi, kegiatan konsumsi ini dapat bersifat kompleks ketika bersinggungan dengan identitas budaya suatu masyarakat tertentu. Meningkatnya permintaan masyarakat terutama pada Kota Surabaya terhadap usaha kuliner menyebabkan usaha kuliner berbasis tradisional menjadi laku keras. Namun, akhir-akhir ini usaha kuliner informal yang sedang berkembang dengan pesat serta digemari kaum urban adalah angkringan. Salah satu lokasi di Surabaya yang cukup banyak ditempati usaha angkringan adalah Kelurahan Pucang Sewu, Kecamatan Gubeng. Keberadaan Mall, pasar tradisional, berdekatan dengan beberapa lokasi kampus, dan makam pahlawan menjadikan Pucang Sewu sebagai wilayah padat penduduk. Hal tersebut dapat menciptakan peluang berbagai bidang usaha untuk memenuhi kebutuhan dan keinginan masyarakat Pucang Sewu terutama pada bidang kuliner. Tujuan dari penelitian ini adalah untuk menganalisis kelayakan usaha angkringan di Kelurahan Pucang Sewu, Kecamatan Gubeng, Kota Surabaya ditinjau dari aspek financial. Penelitian ini menggunakan metode penelitian deskripsi analisis yang bersifat kualitatif. Penelitian ini menggunakan 6 (enam) angkringan sebagai informan yang berguna dalam pengumpulan data melalui metode observasi, wawancara, serta kuisioner. Hasil penelitian menunjukkan bahwa rata-rata hasil perhitungan R/C dari enam informan usaha angkringan tersebut adalah 2,28 > 1; rata-rata hasil perhitungan ROI dari enam informan usaha angkringan tersebut adalah 1,09 > 1; rata-rata BEP unit dari informan tersebut adalah 16 unit, dimana nilai tersebut (<) dari jumlah yang dapat dijual; dan rata-rata BEP rupiah menunjukkan hasil sebesar Rp 989.681 yang maknanya adalah BEP Rupiah kurang dari (<) penerimaan. Kesimpulannya adalah, berdasarkan alat analisis berupa R/C, ROI, dan BEP yang dilakukan kepada enam informan selaku pemilik usaha angkringan di Kelurahan Pucang Sewu Kecamatan Gubeng Kota Surabaya, dinyatakan layak untuk dijalankan.
