Abstract
Fish, as a rich source of protein and popular among the public, has high nutritional value, but is susceptible to losing its freshness. Fish freshness is a key parameter in assessing its quality, with one of the indicators being visible through the eyes of the fish. However, determining the freshness of fish with just a glimpse of the fish's eyes can be a difficult task. Therefore, there is a need for technology that is able to identify the freshness level of fish based on eye images. One of the approaches used is Convolutional Neural Networks (CNN) Visual Geometry Group 16 architecture for classification on fish images. In summary, this research emphasizes the benefits of using the VGG-16 method for fish eye image classification, identifying and managing overfitting to ensure reliable models and optimal results. This method is expected to provide a fast and accurate solution for determining fish quality, which is very useful in the fishing and food processing industries. The results show that the proposed model is able to classify fish freshness with a satisfactory level of accuracy, proving the potential application of this technology in related commercial activities. The created website is able to classify the freshness of fish in the form of uploading an image of the fish to be predicted and provide accurate results.
