Abstract

Shrimp paste is one of the preserved products of small fish or rebon which has been processed through a ripening or fermentation process, grinding or pounding, and drying. The business of making shrimp paste is very helpful for the economy of the people in coastal areas. The problem in this business is that drying still uses human power or is still manual, and sometimes it doesn't get the optimal temperature of the sun, and in the production process there is still an employee who has an unprofessional attitude, especially in time management so that the production process can be hampered and can also result in decrease in production. In this study, an automatic shrimp paste drying device was designed based on tracking the sun's position, with the Arduino Microcontroller method that can move automatically following the sun's heat. In this study, from experiments that have been carried out, all sensors and accumulators used in this automatic shrimp paste drying device can run normally, starting from 08.00 to 17.00 hours, they can run according to angles, ranging from 60⁰, 75⁰, 80º, 85º, 90⁰, 95º, 100º, 105º, 110º, 115º, 120⁰. The optimal water content of shrimp paste should be below 35%, and in this research, it takes 5 hours of drying time to get optimal shrimp paste. This shrimp paste drying device was also tested by comparing it with manual drying of shrimp paste which is 6 hours, so this tool is 1 hour faster in getting the ideal shrimp paste water content.
