Abstract

UD. Mulya Jati is an industry that operates in the food processing sector by producing white tofu and fried tofu. This company is able to produce 520 boxes of tofu per day. The tofu making process experienced problems when the tofu cutting process still used manual methods by placing a ruler on top of the tofu block, then cutting using a knife on each side and the cutting process took 53.7 seconds per box of tofu. Based on these constraints, a tofu cutting tool was designed in the design capstone course which was able to speed up the cutting process. However, the tofu cutting tool still has several disadvantages. Innovations were made to tofu cutting tools to improve existing problems. Innovations were made by increasing the table height, adding a plate as a guide for placing the tofu, adding a knife replacement mechanism, replacing the strip plate on the handle, replacing the handle pipe, adding two knife blades. The results or effects of innovative tofu cutting tools improve the quality of the tofu cutting results so that the tofu is cut with precision and there are no flaws such as chips on the tofu. Innovations in tofu cutting tools are able to speed up the tofu cutting process, so that the results or effects have a difference in the time between the manual tofu cutting process and using tofu cutting tools after the innovation is 32.9 seconds per box of tofu. The results of the cost analysis of the cost of production before designing the tofu cutting tool at a price of Rp. 22,975/Tofu Box, whereas after designing the tofu cutting tool at a price of Rp. 22,612/Tofu Box. The reduction in HPP after designing the tofu cutting tool was Rp. 363/box of tofu or Rp. 174,240/Day.
