Abstract

Penelitian ini bertujuan untuk menentukan kebijakan pengendalian persediaan yang optimal pada sebuah coffee shop dengan menerapkan analisis ABC, serta membandingkan dua metode perhitungan persediaan, yaitu Economic Order Quantity (EOQ) dan Periodic Order Quantity (POQ). Berdasarkan analisis ABC, kategori kelas A terdiri dari tiga bahan baku dengan nilai pemakaian terbesar, yaitu Beans Coffee, Susu UHT, dan Powder Matcha, yang masing-masing memberikan kontribusi biaya persediaan paling dominan. Hasil perhitungan menunjukkan bahwa metode EOQ memberikan efisiensi biaya yang lebih baik dibandingkan POQ untuk sebagian besar bahan baku kelas A. Pada Beans Coffee, metode EOQ menghasilkan total inventory cost sebesar Rp 2.177.380, lebih rendah dibandingkan POQ sebesar Rp 2.325.669. Pada Susu UHT, EOQ juga lebih efisien dengan biaya Rp 659.489, sementara POQ menghasilkan Rp 714.673. Sementara itu, pada Powder Matcha, metode EOQ memberikan TIC sebesar Rp 3.911.471, lebih rendah daripada POQ sebesar Rp 3.945.286. Secara keseluruhan, hasil ini menunjukkan bahwa metode EOQ lebih sesuai digunakan untuk item kelas A, karena mampu menekan biaya persediaan secara signifikan pada bahan baku dengan nilai pemakaian tertinggi. Dengan demikian, penelitian ini merekomendasikan penerapan metode EOQ sebagai prioritas utama dalam pengendalian persediaan pada bahan baku kelas A yang memiliki kontribusi biaya terbesar
