Abstract

Tempeh is a traditional food with high nutritional value and increasing market demand. However, many UMKM such as Setia Tempe still face obstacles in their production process, especially in the stage of breaking and separating soybean skins which is still done manually. This process takes about 20 minutes and involves two workers to process 30 kg of soybeans. This study aims to design a soybean skin breaking and separating tool that can increase production capacity to 80 kg/hour. The design was carried out by considering ergonomic aspects and work efficiency, so that the tool not only increases output, but also operator comfort. The results showed that this tool was able to speed up the process to 22.5 minutes for 30 kg of soybeans and only required one operator. Time efficiency increased by 45.75%, while labor efficiency increased by 50%. In addition, processing capacity increased to 53.4 kg per cycle, with an increase in productivity of 77.7%. The feasibility analysis showed that this tool could reach the break-even point in 47 months, faster than the economic life of the tool which is estimated to reach 96 months. Thus, this tool is an efficient and feasible strategic solution to improve the competitiveness of tempeh processing UMKM.
