Abstract
This study aims to determine the optimal number of workers in the Cavendish banana processing process to meet the target demand efficiently. The object of the study is UD. Queen Fruits owned by Mr. Rudianto in Mojokerto, East Java, which produces various brands such as Queen Fruits, Holy Fresh, and Polos. The main problem faced by the company is the imbalance of workload in each work center, which results in production delays and the inability to meet market demand, especially during peak demand. This study uses the Stopwatch Time Study method to measure working time, Workload Analysis (WLA) to assess the workload of each worker, and capacity planning to measure actual production capacity. The data shows that work center 3, namely the sorting and weighing process, has the highest workload with an average process time of 156.7 seconds for sorting and 5.7 seconds for weighing, and is only done by one person. This causes bottlenecks and accumulation of work that hinder the smooth running of the process. Through WLA analysis, the ideal labor requirements for each work center are calculated to balance the workload and increase efficiency. The addition of manpower and redistribution of workload are recommended as solutions to accelerate the production cycle and meet demand consistently. This study contributes to designing effective human resource management strategies in the horticultural processing industry, especially Cavendish banana processing.
