Abstract

UMKM Rejeki Barokah, located in Puri District, Mojokerto Regency, produces tenggiri fish crackers under the Tujuh Bintang brand. With an average production capacity of 50 kg per day, the production process involves six contract workers. The production stages include mixing the ingredients, mixing the dough, forming the crackers, and frying. However, the manual process of forming the crackers is a significant obstacle, taking 8 minutes per kilogram of dough, which limits production capacity. In August, the UMKM was only able to produce 1,220 kg of the total demand of 1,605 kg. This study aims to design a fish cracker printing machine to increase production efficiency. The printing machine designed according to the anthropometry of workers (hand reach 62 cm, knee height 58 cm, standing elbow height 79 cm) is able to reduce printing time to 5 minutes per kilogram of dough. The use of this machine increases production capacity to 75.6 kg per day, meeting market needs and increasing profits. Cost analysis shows that the production cost for 500 grams packaging is Rp. 16,436- and 250-gram packaging is Rp. 8,218.
