Abstract

Nuggets are a food that is very popular with the community. Raw material innovations are increasingly diverse, including the use of other animal protein sources such as dumbo catfish which aims increase nutrient content, sensory properties and chemical characteristics. Processed fish products have the weakness of low fiber content, so efforts are needed to substitute catfish with fiber-rich ingredients such as yellow pumpkin. This research aims to determine the effect of substitution of African catfish and yellow pumpkin on protein content, fat content and panelists preference for nuggets, including color, taste, aroma and texture. This research used a one-factor Complete Random Design, namely the substitution of dumbo catfish and yellow pumpkin with 4 treatments, namely, PO (dumbo catfish 100% yellow pumpkin 0%), P1 (dumbo catfish 80% yellow pumpkin 20%), P2 (dumbo catfish 60% yellow pumpkin 40%) and P3 (dumbo catfish 40% yellow pumpkin 60%). Data were analyzed using Analysis of Variance if there were differences followed by the Least Significant Difference (LSD) test at a significance level of 5%. The results showed that the substitution of dumbo catfish and yellow pumpkin had a real effect on protein levels, but no real effect on fat levels. The highest protein content was in the PO treatment (7,5207%), while the lowest protein content was in the P3 treatment (4,5980%). All treatments have met SNI 7758:2013 protein content and fat content of fish nuggets, except for the P3 treatment that has not met the protein content standards of fish nuggets. The results of the organoleptic test showed that the substitution of dumbo catfish and yellow pumpkin had a real effect on color and texture, but did not affect the taste and aroma. The average value of the highest color preference level was found in the P3 treatment (4,3120), and the lowest was found in the Pl treatment (3,6145) while the average value of the highest texture preference level was found in the P3 treatment (4,3119), and the lowest was found in the PO treatment (3,499 1).
