Abstract
Di Indonesia, pisang merupakan salah satu buah yang memiliki banyak ragam jenis. Dengan melimpahnya buah pisang di Indonesia membuat masyarakat UMKM memproduksi olahan pisang dalam bentuk keripik menggunakan pemotong manual. Sehingga peneliti akan merancang sebuah mesin perajang pisang dengan sudut pemotongan yang berbeda. Metode dalam penelitian ini meliputi perancangan mesin, pembuatan mesin, pengambilan data dan analisis. Variasi sudut pemotongan yang digunakan 00 dan 450 dengan kecepatan 200, 300 dan 400 rpm. Hasil analisis didapatkan kesimpulan bahwa variasi pada sudut pisau 45o menghasilkan potongan yang lebih baik daripada sudut 0o. Untuk variasi kecepatan, semakin rendah kecepatan yang digunakan, maka semakin baik hasil pemotongan yang dihasilkan.
