Abstract

UMKM Bakso Cinta Pak Mintoro is a mobile meatball business owner who has 15 employees, divided into 3 employees in the meatball production department and 12 employees in the meatball sales department. In the production process, they still use manual methods with hands and spoons to print meatballs, which is done by swinging their hands repeatedly. The printing process is still not effective and also the work position is less ergonomic and the sitting position is bent. In this case, making the workforce often experience pain in parts of the body, namely the lower back and shoulders. Pak Mintoro, in one meat grinder Pak Mintoro grinds as much as 200 kg of beef to ensure uniformity of taste in meatballs. However, this method has the consequence that the meatball dough cannot be printed quickly because the printing capacity is only 40 kg per day. Therefore, to spend 200 kg of dough, it will take 5 days. In this situation, Mr. Mintoro stores the unmolded dough in the freezer at -5°C for the next day's production. However, this method is prone to causing damage to the meatball dough because of the high moisture content in the dough which causes mold growth. Meat preparations can last only for 3 days in the freezer. In this context, researchers propose the use of machines by paying attention to ergonomic principles as a tool to increase the printing capacity of meatballs and shorten the time in making meatballs.
