Abstract

CV. Grandma Bakeria is a company engaged in the manufacture and sale of bread. Products produced by CV. Grandma Bakeria various types of bread ranging from tarts to small buns. There are leftovers of bread that are nearing the expiration date, which becomes an obstacle for the company, including the company's profits are reduced. The demand that is not the same every day causes the bread to not always run out on the same day. The company already has a strategy to sell bread by means of packages consisting of several types of bread, but this strategy has not been effective as indicated by the remaining bread with the best-selling label. Optimization of the decrease in the price of bread starting from the first 10 hours and the next 13 hours of bread was made to reduce the rest of the bread by using a discount strategy on the type of bread studied. Discounts are given to attract customers so that bread can be sold so that there is no leftover bread that can cause company losses. In determining this discount strategy, a model framework will be developed with the objective function, namely determining the discount for the first period (d1) and the discount in the second period (d2). Then do the data collection supporting research and processing model parameters. After obtaining the mathematical model and then testing the validation and verification of the model, if the model has been validated and verified then proceed to determine the optimum value of the decision variable. To determine the effect of critical parameters on the profits of each discount period and overall, a sensitivity analysis was carried out. Optimal discounts in both periods will result in a high Expected Profit compared to the company's Bundling Product. The results of this study are the maximum profit from the two discount periods with different probabilities.
