Abstract

Solusi inovatif untuk meningkatkan efisiensi produksi UMKM kuliner seperti siomay dan dimsum adalah pengembangan mesin penggilingan daging dengan mixer. UMKM mampu memproduksi adonan sebanyak 15-23kg dan produk dijual sebesar Rp 2.500/ bijinya. Metode House of Quality (HoQ) dan Quality Function Deployment (QFD) digunakan dalam penelitian ini untuk memastikan bahwa desain mesin memenuhi kebutuhan pengguna. Dimulai dengan survei untuk mengetahui kebutuhan pelanggan, yang kemudian diterjemahkan ke dalam spesifikasi teknis pada matriks House of quality. Hasil analisis menunjukkan bahwa ergonomi, efisiensi energi, dan kemudahan perawatan adalah hal yang paling penting. Konstruksi selesai mesin memiliki fitur penggilingan otomatis dan pengadukan seragam yang terintegrasi. Diharapkan temuan ini akan membantu keberlanjutan UMKM dengan mengurangi waktu produksi dan meningkatkan kualitas produk. Penelitian ini memberikan manfaat praktis untuk pendekatan sistematis Quality Function Deployment dan desain mesin berbasis kebutuhan pelanggan seperti mesin berbahan stainless, multifungsi dan ergonomi. Mesin ini menggunakan sistem paralel, jadi ketika dinyalakan, mesin penggiling dan mixer bergerak bersamaan. Mesin memiliki daya 900 watt dan kecepatan 1400 rpm. Kapasitas produksinya adalah ± 3 kg dalam 10 menit. Mesin penggiling dan mixer sangat layak di investasikan karena ROR yang dihasilkan sebesar 116,4% per tahun, profitability Index sebesar 45.32 dan payback period selama 0.58 bulan yang menunjukkan bahwa investasi akan kembali dalam waktu kurang dari satu bulan sehingga menjadikan ini investasi yang sangat efisien dan menguntungkan bagi UMKM dimsum siomay.
