Abstract

Bawang merah merupakan komoditi utama dalam bumbu suatu masakan yang sering digunakan pada industri makanan atau rumah tangga cara pengolahanya masih banyak menggunakan cara manual yang memerlukan tenaga dan waktu yang tidak. efisien Rancang bangun mesin pengupas dan pengiris bawang ini bertujuan untuk mengatasi kendala yang dihadapi oleh industri bawang goreng yang masih menggunakan alat manual sehingga memerlukan tenaga dan waktu yang signifikan. Dengan tujuan meningkatkan hasil produksi, efisiensi waktu, dan mengurangi biaya, dirancanglah mesin pengupas dan pengiris bawang. Penelitian ini diperoleh sebuah rancangan dan pembuatan mesin ini menggunakan motor penggerak 0.5 HP dengan Rpm 1400 untuk menggerakan pengupas dan pengiris bawang. Metode penelitian dimulai dengan mengidentifikasi pengaruh jumlah mata pisau dan putaran mesin. Selanjutnya, perencanaan elemen mesin melibatkan perhitungan daya motor listrik, V-belt, poros, bantalan dan pulley untuk mendukung fungsionalitas mesin ini. Dari hasil penelitian mesin ini dapat menghasilkan kapasitas 30 kg/jam. Hasil tertinggi mesin ini dengan pengupasan kapasitas 2,5 kg selama 8 menit dengan kecepatan 500 Rpm untuk kualitas terendah dengan kapasitas 5 Kg dengan kecepatan 800 Rpm. Hasil tertinggi mesin ini dengan kapasitas pengirisan sebanyak 22,22 kg/jam dengan kecepatan 800 Rpm dan menggunakan mata pisau 5, hasil pengirisan terendah menggunakan kecepatan 500 Rpm dengan mata pisau 3 Karena mesin penggerak menggunakan satu motor sehingga digunakan kecepatan 500 Rpm untuk menggerakan pengupas dan pengiris. Dengan demikian, mesin ini berhasil meningkatkan produktivitas dan efisiensi proses pengupasan dan pengirisan bawang merah.
