Abstract

This study aims to determine quality control with Statistical Quality Control (SQC) methods that can improve and prevent the occurrence of defective products and also to identify factors that cause product quality failure and types of damage. This research was conducted at Cahaya Bakery located at Garuda 33 street, Sidoarjo. The method used in this research is quantitative method. The type of research is a case study, using primary data sources. Primary data sources used using observation methods, interview methods, and documentation methods. In this study the object studied was Cahaya Bakery with a sample of 21 days. The analysis tool uses the SQC method, namely by using a check sheet, pareto diagaram, p control map, and cause�and-effect diagram (fishbone). The results showed that product defects that occur are still within control limits or reasonable. The results of the Control Chart analysis as many as 268 pcs were defective. And the CL (Contorl Limit) of product damage is 0.128 and for the control limit, namely the UCL (Upper Control Limit) limit of 0.15 and the LCL (Lower Control Limit) limit of 0.03. The results of the analysis of the Fishbone Diagram, the main cause is due to the Machine factor, because the oven deck that is owned produces a heat source from under the oven only. In addition, the oven deck does not have a timer but the timer is done manually, namely through a wall clock. Furthermore, it comes from the man power factor (human) because workers do it in a hurry, they apply bread fresh from the oven, meaning that the bread is made and sold on the same day but this makes the baker hurry.
