Abstract

Coffee bean grinding is a critical stage in the coffee production process, and the quality of the coffee grind will have a direct impact on the taste and aroma of the coffee produced. Departing from the increasing market demand, the company as a coffee producer in the Malang region must be ready to face changes. As a company that focuses on product quality, CV. Oyitok Co. mpany wants to meet the increasing market demand while maintaining the quality and consistency of coffee products. Currently, Oyitok Coffee still uses machines with single grinders, which may have limitations in production capacity and grind consistency. This study aims to redesign the coffee grinder on CV. Oyitok Company from the previous diskmill type to the burr type. This research uses the Voice of Customer (VOC) approach to summarize customer needs which are further interpreted with the House Of Quality (HOQ). In terms of design, ergonomic aspects are used to obtain a design that matches the dimensions of the operator. While mechanically the burr grinding system was chosen because it was able to produce the best results compared to other milling systems and also only required relatively the same power usage. The results obtained from the redesign of the tool are in the form of dividing grind size into 4 where each level is determined based on the distance between the grinding knives. Compared to the old diskmill type machine, the new burr type machine is considered to be able to produce better and more stable output. In addition, the design of the new machine is also considered to be in accordance with the operator's dimensions or can be said to be ergonomic.
