Abstract
In Indonesia , the culinary industry is growing and growing rapidly . The culinary industry is in great demand by the public , where the industry is designed creatively and innovatively , data from the Creative Economy Agency ( Bekraf ) of the Republic of Indonesia noted that the culinary sub - sector accounts for 41.4 percent of the total contribution of the creative economy , for example , the chips industry . which has begun to attract interest from various regions . Indonesia , especially if you know the various benefits of carrot chips , you will make this snack much sought after in the community . This study used a random sampling method three times and consisted of several stages , namely problem analysis , analysis of the number of blades and rotational speed , and data analysis . Aims to analyze the results of thin - slicing on carrots based on rotation speed and the number of blades on a carrot thin - slicing machine , it is known that the highest production efficiency is slicing with a total of 3 blades with a rotation speed of 350 rpm at 97.22 % , while the highest slicing capacity is slicing variation 3 blades with a speed of 400 rpm are 36.25 kg / hour , and the fastest slicing time with a load of 400 gr is slicing with a variation of 3 blades with a speed of 400 rpm at 43.8 seconds . From the testing and analysis results obtained , it can be obtained that the speed and number of blades greatly affect the capacitance of the resulting machine efficiency .
