Abstract
Perkembangan industri pangan menuntut pelaku usaha untuk mampu mengelola proses produksi secara efisien agar dapat memenuhi permintaan pasar secara konsisten. UMKM Sambal merupakan usaha manufaktur skala kecil di Surabaya yang memproduksi berbagai varian rasa sambal secara semi-manual sehingga masih menghadapi beberapa kendala produksi. Berdasarkan observasi awal, diketahui bahwa proses kerja memiliki beban kerja fisik yang tinggi, distribusi tugas yang tidak seimbang, serta variasi waktu kerja yang menyebabkan ketidakstabilan output harian. Selain itu, belum tersedianya waktu standar membuat perusahaan sulit menentukan kapasitas produksi yang optimal. Penelitian ini dilakukan untuk mengatasi permasalahan tersebut dengan menerapkan metode Cardiovascular Load (CVL), Work Sampling, dan Work Load Analysis (WLA). Metode CVL digunakan untuk mengukur tingkat kelelahan fisik pada setiap stasiun produksi, Work Sampling menghasilkan waktu baku proses sebesar 345,22 detik per botol dengan output standar 73 botol per hari, sedangkan WLA digunakan untuk menentukan kebutuhan tenaga kerja ideal. Hasil penelitian menunjukkan adanya proses kerja yang mengalami kelelahan fisik serta ketidakseimbangan beban kerja, terutama pada bagian penggilingan dan packing, sehingga memerlukan penyesuaian jumlah tenaga kerja. Rekomendasi yang diberikan diharapkan dapat meningkatkan efisiensi produksi, mengurangi beban kerja berlebih, serta mendukung keberlanjutan produksi UMKM Sambal. Dengan penerapan metode kerja yang lebih terukur dan pembagian tugas yang tepat, perusahaan dapat meningkatkan kualitas operasional serta menjaga kestabilan produksi dalam jangka panjang.
