Abstract
Penelitian ini dilatarbelakangi adanya pengusaha rumahan di Sidoarjo yang memproduksi kulit sapi hingga siap untuk dijual. Dalam produksinya, pelaku usaha menggunakan peralatan yang sederhana dalam proses pemotongan kulit sapi yang masih kering, yaitu menggunakan pisau gunting plat. Dalam proses pemotongannya juga membutuhkan tenaga yang besar dan waktu yang lama. Untuk mendorong produksi kulit sapi, maka dibuatkanlah mesin pemotong kulit sapi. Sehingga tujuan dari penelitian ini adalah untuk merancang dan menganalisis kinerja mesin pemotong kulit sapi dengan menggunakan variasi bentuk mata pisau dan putaran. penelitian ini dilakukan dengan tahapan proses perancangan mesin, perakitan, dan Analisa hasil pengujian dengan variasi kecepatan 262,5 rpm, 131,25 rpm, dan 109,375 rpm serta variasi pisau rotary blade dan rotary blade dekagonal untuk menghasilkan potongan yang maksimal. Dan indicator keberhasilannya pisau rotary Blade terdapat 3 yaitu baik (terpotong 100%), kurang baik (terpotong 50%-99%), dan tidak baik (terpotong 0%-49%). Untuk presentase keberhasilan 100% pada 109,375 rpm, 48% pada 131,25 rpm, dan 7% pada 262,5 rpm. Dan menggunakan pisau rotary blade dekagonal pun hasilnya sama yaitu semakin rendah kecepatan putaran pisau, maka semakin baik hasil dari pemotongan kulit sapi. Dengan presentase keberhasilan 100% pada 109,375 rpm, 51% pada 131,25 rpm, dan 9% pada 262,5 rpm. Sementara untuk hasil Analisa kedua pisau, menyatakan bahwa kedua pisau menghasilkan potongan yang hampir sama, pada kecepatan terendah menghasilkan potongan berhasil 100%, dan pada kecepatan 131,25 rpm dan 262,5 rpm, pisau rotary blade dekagonal menghasilkan presentase lebih tinggi yaitu 51% dan 9%. Kata kunci: kulit sapi, pisau gunting plat, mesin pemotong kulit sapi, mata pisau, kecepatan putaran (rpm).
