Abstract

Drying foods such as pentol is a crucial process in the food industry that affects the quality, safety and shelf life of the product. However, there are still obstacles in optimizing the drying process to ensure efficiency and finished products. The process of drying the meatball is carried out on a draining table using bamboo material, which has problems with the process, namely that the wind blown by the fan is not effective because the bamboo material can inhibit the speed of the wind and can cause contamination of the product. So with this, an innovation was made to the meatball drying tool, namely the meatball draining table. The innovation is carried out on the shelf by using 10 mm perforated 304 stainless steel material which can reduce the drying process by 15 minutes. The wind speed in this innovation is able to penetrate the bottom of the drainer rack so that the water content in the meatball can fall to the bottom of the waste collection container. The dimensions of this tool also apply worker anthropometry, so this tool is comfortable for employees to use. Innovations in the pin draining table can also increase the capacity of the pin in the drying process, previously the large table had a capacity of 966 (small meatball), 560 (medium meatball), 312 (large meatball) and the small table had a capacity of 630 (small meatball), 368 (medium meatball), 204 (large meatball). The increase occurred in tables that had been innovated with a capacity of 1152 (small meatball), 666 (medium meatball), 392 (large meatball). Increasing capacity is one of the factors to speed up the drying process so that it can be maximized.
